Eric Toft, Brewmaster at Schönramer Brauerei, one of Germany’s small craft breweries, speaks with us on the up and coming new hop varieties being bred in his country. Eric is also a representative of the German Hop Growers Association and helps choose which new test hop varieties will be scaled up to be grown commercially. These new varieties are often based on American hops like Cascade but allow German brewers easier access than their harder to get cousins, while American brewers get more variety. Some of these–like Mandarina–are already popping up in beers and have such flavors and aromas like white wine, gooseberries, lime, and red berries, as well as strawberry and orange.
