Imperial Bottle Shop & Taproom’s FIZZ pop-up bar features sparkling barrel-aged beer, wine, and cider cocktails

Imperial Bottle Shop & Taproom’s NE Alberta Street location is transforming their streetside covered and heated outdoor seating into the pop-up FIZZ bar for Spring. After opening a hot mulled beer, cider and wine pop-up called Glu Bar over the winter, it’s now transforming into a seasonal showcase of fizzy, floral cocktails made from local sparkling wines, barrel-aged hard ciders, and sour beer.



Imperial’s main bar/taproom and bottle shop will operate as normal during the pop-up. They now have 7 spaced indoor tables with table service, and the bottle shop is open to one party to shop at a time. A full taplist of craft beers is available, while the outdoor FIZZ bar is primarily reservation based.

“A few local producers we work with started offering sparkling wines in kegs,” says owner Alex Kurnellas. “And having ‘champagne’ on tap was just too fun to pass up, especially when we started thinking about making ‘champagne-style’ cocktails with them.”  He’s referring specifically to a Petillant Chardonnay from Portland’s Coopers Hall and a Bubbly Rosé from Bold Leaf Wine, a collaboration between 2 Towns Ciderhouse & Stoller Winery.



FIZZ has a four taps setup in Imperial’s front bay window to pour the two sparkling wines, a special one-off barrel-aged farmhouse cider from local small-batch producer Baird & Dewar, and a Berliner-style Weisse tart wheat ale from Zoiglhaus Brewing Co. All will be mixed into refreshing cocktails with top-notch PNW products such as floral bitters from Portland Bitters Project, Finnriver Farms Fruited Apple Brandy Wines, and barrel-aged honey from local The Barreled Bee.



Their menu highlights other fizzy fermentations such as the classic Saison DuPont, farmhouse ales from Logsdon Farmhouse Ales and other local breweries, and Basque-Style cider from Cascade Lock’s Son of Man, complete with traditional Basque long-pour service. Imperial also plans to use hyper-seasonal ingredients throughout the spring, hoping to serve drinks such as saison steeped in fresh dandelion greens or rosé steeped in rose petals and Hood strawberries.
