Son of Man Cider PDX Pop-Up with Tacos, Hamachi Tostadas & Choco tacos

Son of Man Cider, the New School’s co-winner for Oregon Cidery of the Year 2022, is popping up in Portland at Someday Bar on Saturday January 28th. There will be Son of Man’s acclaimed funky and traditional Spanish Basque-style cider, with Hamachi Tostadas, tacos, and even choco tacos on the special menu, with an even rarer chance to try Txakoli fresh wine from Donostia.

Son of Man makes locally produced ciders that owe more to generations of cidermakers in Northern Spain than America. From their facility alongside the Columbia River Gorge in Cascade Locks, Oregon they produce hard cider for funky earthy terroir fans who enjoy wild and farmhouse ales and natural wines that taste like the time and place it comes from. The flavors are bright and tart, funky, expressions of the apples and habitat with no added fruits, flavorings, or sulfites. Unlike many cideries these days, Son of Man doesn’t buy juice and only presses cider apples once a year during the fall harvest, and its fermentation takes place with over four months in massive kupelas (American oak foeders) with only native yeasts from the skins doing the work. Before it’s ready it finishes for another two months in stainless steel before it’s ready to bottle or can.

Blai Txakolina

Son of Man partner Guillermo Castanos is a Basque oenologist based in San Sebastian, Spain who is in Portland for the event with his own Txakoli wine to share. Castanos was instrumental in helping Son of Man create their Basque style cider in Oregon in the most authentic way. Castano visits Portland once a year to taste Son of Man ciders annual production, and help blend the new batches of their vintage Sagardo and Beti brands. This year he is bringing a few cases of his own incredible Txakoli, in anticipation of the wine being available in the Portland market through Estelle Imports later in the Spring. Blai has the characteristic acidity of the Txakoli you’re used to if you are familiar with the style, but with a pronounced fruit flavor to balance the zing.

Hamachi Tostada

Jasper Smith, Co-founder and cidermaker of Son of Man, came to Basque cider via his love of food. Having worked in James Beard award winning kitchens as well as local favorites like St. Jack, Jasper shares his love of food + drink through tacos and has helped create the menu for the pop-up with Someday’s kitchen.

The Txakoli wine and Son of Man Cider should be a perfect pairing for the Tostada la guerrerense served up with raw hamachi, avocado and salsa macha. Basque cider is at its best with food. It evolved in harmony with the vaunted Basque culinary tradition, and you can taste it. The bright and tart cider will offer a crisp pallet cleansing sip between bites of charred sweet potato tacos at the pop up, topped with pickled onion, queso fresco and salsa verde.
