Off-dry. It shows peach essence and depth from prolonged skin and flesh contact.pFriem Pêche Lambic-Inspired Ale: When we add juicy, heirloom peaches to our year-old Lambic inspired ale, magic happens— they unite, gushing with bright acidity, nutty undertones and a tangy finish. It does take eight more months of aging, but it’s well worth the wait.ABOUT RACK & CLOTHRack & Cloth is a small, diverse farm and cidery located in Mosier Oregon. The farm was started in 2008 by Silas Bleakley. They grow primarily peaches and apples, though they also grow asparagus, plums, apricots, as well as raise a small number of chickens, sheep, and pigs. They strive to create a closed-loop system on the farm. For example, the unsaleable fruit and produce is fed to the animals, which in turn create manure for them to compost and then reapply to the land to supply nutrients back to the plants. The cidery began in 2012 as a project to allow them to use their own fruit to create a premium product. Rack & Cloth only press fruit once a year in the fall and typically ferment and age the cider for at least a year before its release. The ethos that guides them is to start with good fruit and stay out of the way. Most of the ciders are fermented and aged in oak on lees. It is unfiltered and unfined, dry and complex cider.
